I have trouble building helicopters that fly, and I find them hard to control. The only type of helicopter that I can (somehow) coax into the air is one with a coaxial rotor system, because all the others go into a tailspin. The CoM & CoT are equal on all my helis. How do I fix this (and how can I learn to fly them properly)?

vertical/horizontal stabilizers are important to keep stability on the yaw and pitch axis

Second, you need to turn reverse rotation on one of the rotors if your doing a coaxial
First of all, CoM must be aligned or as close to the main rotor, not the CoT
