Is there any guide on how to tweak a plane's flight characteristics?

Hi,
i started playing simple planes not long ago and i am still doing the most basic things actually, but somehow i just dont manage to get the flight characteristics of my airplanes right. For example i built a very simple Biplane that always turns turns to the right automatically in the start run until it reaches a certain speed i believe. Also many planes stay at a too high angle of attack when try to keep them in level flight and often they slightly yaw and roll a bit to the left or right, without any input over time. Of course I'm trying to shift around the CoG using dead weight or fuel, also playing around with the CoT a bit and i'm sticking to rather basic propeller airplanes. I also think where the most drag is has a high impact on the flight characteristics, as on my second plane i uploaded here, i actually wanted to use the wing mounted landing gear, but the plane only flew stable until i pulled up the gear. So i built in a fixed landing gear, which made the plane fly nice and stable. ist there any more to it? Also tried giving the stabilizers a slightly different angle than the wings, but without any success at all. So if you know any further tutorials on how to build nicely flying stable aircraft, or any other tricks, please let me know, i'd appreciate it.

    If the plane continues to tilt to the right or left when flying although the horizontal focus is even, you can simply save the plane with a different name and delete the previous one. Also if the wing is fluttering split the wing and connect it to the body (only connected to the fuselage).
