In addition to what others have said, I just want to point out that the number of physics calculations / updates per second are affected by settings. This can make a lot of things not work, so always check the settings that the builder recommends.
in more depth: it changes drag calculations(dramatically), aerodynamic calculations, soft-body joints physics(what @asteroidbook345 mentioned) however it only gets dramatic if you have loads of calculations resting on a soft-body point, ie a plane with realistic landing gear, and a load more behind-the-scenes stuff i won't go into(mostly because theirs a lot more than whats worth mentioning)
The worst thing of all that low physics does is that it makes custom suspension not work

Waht asteroidbook345 said. Plus of the physics settings has a lower setting, you'll have a better time running your aircraft
