Put the terrain and shadows settings to medium, there almost won't be any difference. Also reduce the water and aircraft reflections quality to low, it won't have a big impact too.
Some parts lag more. For example, my phone can handle 300 parts like it's nothing, but lagged with my A-10 Thunderbolt II (see my profile page's first plane) which only had around 180 parts. That's because most of them were weapons. Weapons and gizmos take more power than wings and wings take more power than dumb fuselage blocks.

How much storage does your device have? In the case of Apple devices, more storage will result in more RAM, with I believe the RAM being 1/8 or 1/16 of the storage. @BigBigTheMac

Sometimes the way the parts are put together can lag the game or just weirdly configured parts.
"most" might be a bit exaggerated, i think "many" or "a lot" would fit better

Idk what mine is but its a ipad 6 generation 9.7 and i can hold up to 1000+ on high graphics
@BigBigTheMac my device is with 4gb ram 64gb storage expandable upto 120gb.

2 Gb rams and you used high quality settings.. Ok.. you can try to turn down the physic to low or turn off image effect because both of them are mostly the cause of the lag
