I'm super late to the party, but I've been experimenting with wind powered sailboats for a while now. I think the key is efficiency. The more drag in the water and in the air the harder it is going to be to sail. The best sailboats that I have made have been light, hydrofoiling, boats with limited fuselage parts and using vertically placed symetric wings as sails. If youre going for looks, I think the centerboard in the water will be very important.
Make the sail out of lots of fuelsalges to give texture, that will also allow wind power!
