As many have said, use fuselage blocks, but more than that you can look at detailed reference images and use the built in XML mod to change the size and properties of parts with which you can add a lot of details.... more than that?... just build weird and wonderful stuff that you enjoy building and makes you happy, yeah it's called simpleplanes but I build cars and hover racers, others build mechs and guns and some build anime girls... and memes... and lastly like @VolcanicAsh said, dont be scared to push buttons to see what they do.

I do 'what if' builds as a bit of fun, it gives you a lot more freedom in what you make. Another good tip is to make custom weapons, rails and gears. These can turn an amateurish looking build into something more professional.
