I'm making another aircraft, and for some reason, the nose dips down so hard the plane almost can do a flip. I've tried balancing it out with more weight in the rear, but it doesn't even do anything.

The Center of mass must be behind the Center of lift. This is already obvious in the game tutorial. You could definitely try to move the wings or add a canard, so the center of lift will move further to and then after the center of mass! :)
You could just reclick the tag, it will send you back @Niyyo
