Thanks for the feedback guys. I was able to repro it by tapping and holding on the flight stick, and then minimizing the game. When I bring the game back, the virtual stick will no longer provide input to the airplane. I can still control it by grabbing the flight stick in the cockpit, but the virtual stick no longer works.
This has happened to me many times before were seemingly at random the controls just stop responding. If I’m still the touching the right stick I can still move that, but nothing else.
Not to mention sometimes my plane just explodes for no reason.
Very obnoxious.

it happens to me quite a lot. i was trying to refuel my custom Tu 430 plane and the controls stopped working.

It happens on any craft from what I can tell.
It’s happened on 2Papi2Chulos Mosquito and EdamCheese6’s F-18. I am using an IPhone 11. @AndrewGarrison
