If your making a super detailed replica your gonna need a lot of stuff, blueprints, 3D models with high detail, real life pictures (if replica), and other stuff, for me I like to start by using blueprints for the fuselage, I then add the landing gear/floats, then I make the flight model and then the details and cockpit will be last, if its fictional I mostly use 1 to 2 or even more aircraft designs to make a good looking fictional aircraft and then the rest is probably the same
99% of my creations are original so I just go with whatever feels right
Other than using blueprints, section the plane off into sections that can be built with SP fuselages.
I usually use blueprints and whatever resources I can find to determine accurate size of components. For weapons I just use a single view since they're generally just circular but like for the .303 browning I made I used side and top view
