SimpleRockets 2 is much more realistic in damage physics (if you set it to high), and everything explodes. Here, almost nothing explodes only fuselages and wings, basic cockpit don’t explode.
"multiple parts damaged" causes when 2 or more parts receive quite the significant damage
but because the damage models are very simple (fine -> burn -> boom) in the game you often won't see if a part is damaged or not
Parts will take damage if it collides with another thing, be it ground, water, objects, or hell, even other parts
Conclusion:
it's not a bug
it's a very simplistic damage model
also Idk why base cockpits that is set as main cockpit don't explode, but it's amusing to see your cockpit get flung over mach 6 sometimes
Not a bug with the game, there's something going on with the specific craft. Most likely it's what Flight said: moving parts colliding with one another. If you can't immediately see any damage, the offending parts are likely somewhere inside the craft (if there's custom landing gear, quite possibly there).
Which plane in particular are you having this problem with?
You've likely got moving parts that are colliding. In that case, just disable aircraft collisions on those parts.
The basic cockpit isn't supposed to be destroyed, otherwise the game would cease to function.

This is a bug that is never fixed. It was there since the release on mobile.
