As no one has answered my question on the Simplerockets website, I'm going to ask it here.
Is there a way to enable mouse as joystick in Juno like we have in SimplePlanes?
Please tell me how to set it up
And if not, please tell me an alternative way to try to emulate it.

I don't think there is one. Best way I've found is to set up my craft's controls (for planes, at least) so that I can use the the pitch slider in the bottom-left corner by click/dragging with the mouse, and using roll/yaw as normal on keyboard. It's pretty janky but it works for me, though it definitely takes some getting used to.
