@WaterFlavouredSpitfires That's not normal. Not sure what's going on though, but it's definitely not a problem with every copy of the game. Perhaps try verifying the file integrity (assuming you have it through Steam)?

It's not random. The aircraft lists are sorted alphabetically by whatever names you've saved the planes as, just like in Sandbox mode.
