every time I attempt to build something along the outline of a blueprint, the blocks I place end up begin waaaaay too far away from the actuak build. Is there anything I can do to fix this?

First I just go along with that then after a while I multi-select all the parts and move them to the X coordinate 0
It is the camera your using, Put the blocks before you go to the blueprint.
"Do not move that main cockpit part".
The blueprint memorizes the placement based on the location of the main cockpit. I am also mobile.
