Assuming the actual save data location is the same for GOG as it is for Steam (there's really no reason why it'd be different; the actual game files might have a different path but the saves shouldn't), your save data will be in the folder:
C:\Users\[yourUserName]\AppData\LocalLow\Jundroo\SimplePlanes.@Aviator720 im on pc
In your device storage. Copy all your planes, and update the game. If so, put all your planes in the new file, done.

@WaterFlavouredSpitfires im using gog so the simpleplanes folder has been merged with gog (i think)
