Step 1: Install MisterM's Weather Mod
Step 2: (optional) Install any Mod Map/Plugin
Step 3: Set your settings to be Terrain=High Water=High (or medium/low for low end computers) And set Reflections to None.
Step 4: Get a plane and set the weather to whatever you want and FLY THE SKIES!

@CaptainNoble its because most aircraft are extremely glossy and FS2004/X aircraft arent that glossy but still i reccomend it to be set as none.
Reflections to none? You sure?
