Focus on making a good hull. That's the make it or break it for good ships. I normally spend half the entire building time on just the hull. Make it as realistic and good as possible. Ensure the buoyancy is just right to keep the boat afloat while not making the water look like solid ground. I suggest doing the buoyancy at the end, as this will need to change with more weight.
The rest of the stuff is as you wish. Make a detailed superstructure, make sure it has at least one naval cannon (if its military), also CIWS is very good to have, and add a couple of missiles. Countermeasures, when resized and ammo count set to zero, make very good and very easy missile firing pods.
The fuselage cuts are a bit tedious but it can be pretty good.
For a dull hull I usually use circular fuselages facing up, set the height to 10 and the width to less than 8, then cut it in half, then I start shaping my ships from there.

@MIGFOXHOUND31BSM26 ee... you basically take a fuselage, cut it in half, rotate it forward, adjust that to taste, do the same for the rear half of the ship, you're done.. God I can't explain it well- but basically that's how I kinda did my IJN Yukikaze, results in a rather smoothly satisfying hull and very low part too for what it is, that's how I do

Some tips for building ship hulls, if you use smooth corners on fuselage blocks, you can get a nice cargo ship hull. Additionally, rotating a fuselage block 45° can let you do nice angles for a sharper bottomed hull, fuselage cutting is really useful in this. Honestly if you're just building your own design and not a replica, experiment with the game for a little bit and just see what you can make, you might come up with something neat that inspires an eventual finished product.
alright melonsunder, here's what I know on how to make ships! (contains something that is helpful, if not, atleast interesting in it's used case)

make hull with fuselage, give buoyancy.
use gyroscope, XML if ship tips over(alternatively, add gyro)
use a VTOL engine(and it's nozzle) to propel and turn
profieft.
|[ How to : Intermediate Ship ]|
Hull from fuselage as usual, but do not give buoyancy;
instead, have several xml-resized buoyant fuselage blocks(if not float add mass or buoyancy via overload) placed on the waterline(go wiki it if no know) on four points of the ship like how the legs are on a table
have a VTOL engine and nozzle; disable the input on the Nozzle
use wings for optimum realistik;
first, set up a LOOONG AND TAAAALL ass wing on the middle of the hull, resize it small, this will act as a "straightener" after you turn(so you don't drift as you would on the beginner ship)
use another same resized wing on the rearmost part of the ship to act as a rudder(like on a plane), this will allow you to turn.
use xml'd airbrakes with input "1" and max "50" to cap the ship's speed

OR other style of shipbuilding, specific to each person(like me, who while uses fuselage for hull, uses them in a manner that is different from usual)

A : make rudder bigger

A : check your draft(the red bottom part of ship), is it too shallow/short? check your beam(the width of ship), is it too slim? if sure, congratulations!
