Well- I'm officially peeved. My boats keep spinning out no matter how many bloody stabilizers I have or how much I micromanage it. It's getting reeeaaallly annoying. And no, I am not going to use mods (XML included).

@EternalDarkness I'm doing that too D*: I can't think of what else could be going wrong.
To prevent spinning out (doing doughnuts), try putting vertical stabilizer on the stern. For some reason, physics is the same for both planes and boats, so keep CoM in front of the CoL.

Try to use less-powerful propulsion, or make the boat heavier but buoyant
