I'm not shure how possible this is, but in a dogfight if you are hit by bullets the parts the bullets hit lose 'durability' and they don't function as well, such as engines losing power, or wings providing less lift. And if a part loses all its durability, if it has any fuel it explodes. Damaging parts around it, and if it has no fuel it just stops working and or breaks off. Missiles could deal extreme dammage, but not quite be a one shot.
This could allow the implementation of an armor block or armor option in it's part properties, the armor amount can be changed, more armor adding durrabuilty, but increasing a parts weight, or reducing it's performance.
This could further lead to special armor piercing guns that would have a lower firing rate and slightly less damage, but ignores armor values.

I agree but if Jundroo won't add this then we'll have to settle for whenever a part is hit it falls off the plane
um you can use mod to make slow fire rate or high fire rate,,,

There could be sliders for the fire rate (how fast the weapon fires) and damage ( how much durability it takes from a part when hit)

You know what you are talking about! The devs are most likely already working on this, as it has been requested hundreds of times for the last year or so. Either in the next update or maybe if they make Simple Planes 2, they will hopefully add this so dogfights and planes in general can be more realistic.
