Well, reduce the amount of fuel in da plane. Blocks with no fuel explode less often.
Use multiple small blocks. If one is destroyed, u will still stay in air.
Use some old blocks. They never explode when hit. They just snap off. U can use a block shape covered with fuselage blocks.
Howewer, all that stuff will make your plane kinda heavy and complicated.
