@Agung44 the way I get my aircraft to turn better is weight distribution. If you have problems with it not turning as well as you want it to then move the mass of the plane back. Careful though as the more you move the mass back the more the plane becomes unstable. Eventually you will move it so far back you will just do flips end over end.
With just guns, you've got to place the guns right. Too many, and lag interferes. Too little, and you'll die. Place them near the center of your plane for best accuracy, or on the wings for a larger field of fire. @Agung44
Dogfighting would be swept-back wings. You'll need plenty of space for missiles and guns too. Have a lot of speed too. You'll have to turn on a dime. @Agung44

You also have to find the perfect balance of CoM and CoL @Awsomur
More speed = more manuverablity.
Too much speed = unstable controls.
Angle the wings back. This will make the airflow more stable.
Bigger control surfaces don't always mean more maneuverability.
Com further to nose for better pitch. Add more roll control surface for better roll.
