Fuselage wings/elevators/rudder?

I need some real help on making these kind of creations. I wanted to go further than just using regular wings and use fuselage as a much more detailed look. When ever I do this, I keep failing because the wedges seem to join onto another part and not make the control surface function and leave it stuck. I am on IOS so it is difficult to not use mods but I have a MAC that has mods but I’m not accurate on it because I don’t use it often.
I was inspired by BaconAircraft’s Piper J-3 Cub of how he made the wings. Do you put a wing panel inside the fuselage control surface? I would really appreciate the suggestions.

Don't realy see what the problem is I just place a wing over the fuse wing and nudge down after adjusting the shape of the wing works 90%of the time
Then agian the wing sometimes clips thought during turns

Put a fuselage block on a rotator, put a piece of wing on it, and nudge everything together. There's really not much wisdom to it.

if the are connected to the fuselage you can just make the fuselage on one side and then the wing on the other side and then mirror the fuselages so that they come to the other side you [should only mirror the fuselage blocks and not the entire Aircraft]. Also you can make fuselage wings and put wings over them on the fuselage and nudge them down.
