Specifically modern jet fighters and fighter bombers. When I make them, they always pitch up horribly. It’ll pitch like it has little notches in it and it will bounce around when going back to same angle with fuselage. Not to mention it will roll to a side or another. It seems like rolling is hard and rolls to much after I stop telling it to. Sometimes they’ll spin out. What is the seceret? I’ll make planes from ww2 that fly great and I’ve seen jets people make the fly as stable when rolling and everything as my ww2 planes. How can I improve my jets to work like that? How can I make my jets fly and handle smoothly?

If your COM and COL are correctly placed, and you still have stability issues, try adding more lift.

Anything can be made to fly perfectly Well, as people have already mentioned the key is balancing col and cog with the lift being behind the mass, normally by about 0.5blocks (ish) and located about 1/3rd of the way back from the leading edge of the wing. I use small wing panels to make it balance (more on the front brings col forward etc) and then nudge them into the fuselage so you can't see them. Centre of thrust can also lead to stability issues, try putting the actual jet engine either close to or in front of the cog (hide it in the fus) then reduce the power of the one in the back so it's just decorative. Have a look at the last 2 of my builds n take them apart for bits if u want.
Keep a eye on your COG and COT and use custom control surfaces

@ViciousTNT correct! Plus you could mirror and usually that solves my problem, I'd usually make sure the plane is fully symmetrical.

Try to balance the plane, the CoM must be at a reasonable distance from the CoL, but always at the front. If you are looking for good speed, try and make a delta fighter. The key, however, is to make your planes narrow to minimize drag. If you want to, you can make the control surfaces larger or you can add canards, as they give extra horizontal stability.
Generally helps to lower mass as much as possible on the wings and get COT exactly in line with COG
