In sp when a part gets shot it is probably not the only one who gets damaged.
Every part that is loaded with your plane is technically a part of it so if your gun has "Infinity" as the damage and shoot a random part that you just placed the areas connected to the cockpit will get destroyed and disconnected ensuring a 100% chance of instand destruction. It doesn't matter where you shoot as the cockpit will allways be targeted even if you shoot a random fuselage.
This is just what i have found so i can't say for sure that this explination is 100% correct

Any damage taken after the cockpit has been detached like if a part falls down and gets damaged the cockpit will have the explosion.

I think you need an "explination" on how to use periods.
@randomusername nope not all parts, you cant destroy more parts if you shoot the bush plane and then the remains the explosion happens on the cockpit
I haven't really tested the infinity damage guns but this sounds about right
