Basically I want it to be able to drive the Gold Prix in a 0:16 or under (whist being driven by ai) but it just exposed or starts going sideways. Help would be appreciated.

First, what @Rocketguy2079 said, also I would make your motor less powerful. Lastly, test different types of wheels, you would be amazed at the difference in grip between tires.

Make the steering less sensitive, the lower the steering angle, the better. My Blazing Aquamarine prototype has a steering angle of 2 degrees
Yeah, different wheel and tyre types would make it much better just like @Zaineman said.

Try make the steering less sensitive and make the suspension less stiff.
