You control surfaces could be too big so try reshaping shaping them.

Probably it has to do with the way like this:
Yaw rate is sometimes involved when you roll to much, it misplaces your angle of slip(this is what I have observed in my planes too). Maybe you need some fly-by-wire funky tree stuff to fix that
