Understandable.
Maybe doing what I said is an extreme end of the spectrum.
@GuyFolk that was intentional, the idea is to keep the plane at a high angle of attack beyond the stall threshold, but also prevent it from flipping around so that it uses the wings like drag surfaces in conjunction with thrust from the engines to turn very tightly while still maintaining a forward velocity.
Engines layout is weird but work surprisingly well lol.
Fly-by-wire is nice and simple, I think your fbw is trying to correct angle of attack and angle of slip so it will somewhat hamper your post stall.
I tried disable the correction of angle of attack and angle of slip and it work like a charm.
I suggest that your plane have 2 mode of operation, one is keeping angle of attack and angle of slip to fly normally the other is just ignore angle of attack and angle of slip to go full post stall.
