@LordieLol okay so the biggest thing I'd say you need to get to grips with is fuselage sections. I know they seem sorta intimidating at first, but the amount of control and freedom they give you when building cannot be overstated. I rebuilt your plane from fuselage section (trying to keep the looks as close as possible) here. This version also flies pretty nicely, so feel free to take it for a spin.
This one didn't fly too well for a few reasons. Firstly, the CoM and CoL were really fair apart. Fixing this is one of the best things about fuselage sections, because they let you put fuel basically anywhere. In the fixed version, I added a load of fuel near the back to get the plane balanced out a bit more nicely.
Secondly, pitch surfaces. Pitch surfaces should usually go on the stabilisers (or canards if your plane has them). They can't work very well on the main wing because they're really close to the CoM, so they have no leverage. I moved them to the stabilisers to sort this.
The only other thing I'd mention is that you somehow had about nine cockpits mixed in there, I'm not sure how you did that haha.
