Put the VTOL slider all the way up before takeoff. Elevators have a tendency to break off when attempting aggressive maneuvers at high speeds (~1000 mph), which doesn't have a great end result for the plane. Doesn't work well on mobile (at least on my OnePlus One, which is a pretty fast phone).
