I think the bird flapping is because ur wings a grenerating a lot of lift (obviously). Try adding a fuselage piece going through the wing slightly at the part closest to the main body and going through that main body. The fuselage piece with act as a support. As for the op flaps, try making the flaps area on the wing small. Hopefully this helps u.
