The problem is the movement of the thrust and the vertical stabilizers.
Try to remove the wing thrusters and build fake engines. ^^

sorry, i have no idea why the "plane" have such spasms..
I had the same problem with a old design by me.. after 4h of testing i deleted it. -.-"
Maybe build it bigger with more wing area.

without the wing thrusters it flies okay with rotated wings.

And activator #1 rotates the rear wings and guns
