Auto Credit Based on catmeowin's snowwhite
I'm not totally sure if I fixed the right thing here, it was hard to tell from your description. If I haven't got the right thing, let me know and I can try to help. I replaced some of the tail blocks with fuselage sections in the same shape and size, so that I could put fuel in them and take some away from the front of the plane. This moved the CoM backwards a bit, enough so that the main wings would be in front of it. I then changed the main wings to have a flat-bottomed profile for more lift at the front, and it now cruises level at around 380mph, beginning to pitch up beyond that.
