Just like
when you grab the pylon part and drag it around you should see the blue save to assembly thing at the right or maybe left corner of your screen. Cant miss it. Then you just drag your finger there.
When it becomes translucent then you can let go, name your subassembly, then you got it.
(Assembly tab can be found at the very bottom of where the parts are.)

Also I um don’t know how to save a subassembly, is it even meant for mobile?

this is really good, though i recomend putting a TargetSelected (or Selected Target i forgot) input onto a motor connected to a hollow fuselage so when you get a missile lock it opens the pod
