I'm trying to make an unstable plane so the CoM will be forward :p
But i plan to do a fly by wire system so it can be flyable like this plane

make sure the col is behind the com Or the blue circle behind the red one if that's not it , try my last suggestion

I have tried to make a plane like this with swept forward wings, I am currently working on it, judging by the problems you have it seems too light, I put 1000 to 2000 lbs on my project and it got better, fine tune the wings, shift balance using the fuselage weighing feature too
