can't figure out how to make it turn better, suggustions on fixing it welcome.

For turning, how about adding RCS thrusters to the sides, then set Roll as turn control. As the boat tries to turn, the thrusters will fire and slow it down so it doesn't drift so much. I did that to my catamaran, check it out maybe.
