Reupload. Fixed the engine, now 50hp. Fixed the steering, you can use roll to lean at higher speeds and yaw to use the handlebars at low speeds. You can also wheelie with pitch.

Other than that I just modify my builds until I'm happy with them.
@TheGreatToad sure. I'm not good with advice, but I would say that I heavily abuse part smoothing as well as the overload and fine tune mods, and also, I try to use over 50 parts per build (with planes)
