VTOL controls your trim, and is normally the more effective pitch control too. The RCN thrusters don't have any real kind of authority past Mach 1.
Taking off is a bit weird; you have to set trim downwards a bit, and not touch the pitch controls. It'll lurch upwards when it leaves the ground, but should be fine after you counter that.
Once in the air, stick as close to 100,000ft as possible, and you should be good for about 35,000mph before the physics engine tells you to calm down and the plane goes in to a weird accelerating spin. Applying more trim does stop this spin, if you want to go for max speed.
