Back to the future
My guess is there is a part that when the car is spawned in, is spawned under the ground. When the car goes off the runway it is pulled through the terrain and the resistance causes an explosion, similar to if it ran into a wall. This occasionally happens with missiles clipping through terrain and exploding upon exiting the other side. @LinusTouchTips
