@Aarons123 usually when you've become so deep in a build, that you completely forget about saving. Happens to me a lot, but I'm starting to get better at frequently saving whenever I can.
Game crashing after hours of building without saving
Pressing undo and accidentally dematerializing half the universe
Moving parts attaching to something they shouldn't, thoroughly ruining the entire plane
Needing to continuously ask for people to XML Mod stuff for you since Apple is too much of a bitch to allow us to mod
Trying to find that one tiny part that got mirrored over and over again, increasing the part count to well over acceptable, and decreasing your FPS to an irrational number

@Frenchyfry Don't use detached, I use pylons. I found the problem, I have a tail design similar to that of the Lancaster and that was the problem, wish you could set when the engine fires after launch.
Paneling. You need just some patience and precision, which I have, that all goes down the drain when I figured “no. That doesn’t look good.” And trash the 30 minutes I’ve spent on it
Trying to click the scale parts button on FT only to realize that I missed, pressed undo, and now have to re-do everything that I just typed into overload.
The fact that you make a very detailed livery and it so happens that the plane somehow falls apart.

Long story short, the livery gets removed for the fixing and put back on.

@AWESOMENESS360 most of that is true but how do you not save after hours of working on something? I save every 5 minutes or so

When you try to add parts for details to the fuselage and the flaps stop working... that always got me.
