One of the main mistakes I see in experienced users is they try to make their planes fly too perfectly and focus far too much on the numbers instead of making the plane fly like an actual aeroplane. Stuff like planes stalling incredibly weirdly, having pathetic maximum angle of attacks, or simply flying like the planes are on rails are all too common.
These planes and people are forgetting a key thing that makes planes fly like planes.
What’s the secret?
You will kick yourself it’s so simple... unless you’ve already worked it out lol.
It’s this: shape your wings to be the same shape, size, and location as they are on the real thing, or your fictional craft.
This works on almost all aircraft. The only places it doesn’t really work is with aircraft with VGs and slats... sometimes...
If you have traditional wings, the only adjustments you’ll need to do is shift the CoM around and sometimes change the aerofoil. The plane will naturally end up performing like the real thing in the end.
Wing physics aren’t actually that bad in SP. When they’re in full flight they’re actually rather realistic. The only things they’re not so good at is very low speed flight (for some reason there’s a thing where if you go below a certain speed, the just decide to not make lift) and deep stall physics. With everything else they’re actually really good.
So next time your plane is flying dumb and no matter how much you’re adjusting the shape of your wings it won’t fly right; take a breath, descale your wings to 1:1 (if you scaled them), and reshape them to the shape they are in real life, or the shape they are on your fictional plane, and try it out. It’ll probably solve your issues!
Just one thing, there’s also an issue I see a lot with how people do their control surfaces (especially pitch controls) which make their planes fly bad, but I’m gonna talk about that another time. Maybe.

@ChisP the F-16 is more symmetrical. It's actually flat on top and bottom with a beveled leading edge and control surfaces
This is why we need them wing part with realistic airfoil, so we can stop hiding scaled wings inside fake fuselage wings.

completely agreed. wing position and loading is very important index to determine flight characteristics, but many builders underrates or ignores it. I've used that method for a long time, it always makes satisfying flight model.
I reminisce about flight model of il-2 or LOMAC series when making mine(because that I'm not real pilot), the method makes it easier to create a feelings similar to these games.
however, sometimes, too 'simulationic' model is very hard to fly with keyboard, unlike flight stick or mouse control. so it would be better consider keyboard players.
So what would be the best airfoil type for an f-16 since it’s NACA-64A-204 I assume its semi symmetric but what do yall think

A pretty big problem for SP's wing mechanics is pusher config.
anything with CoT behind CoM would cause unpredictable sudden roll during flight (even if it's behind CoM and before CoL)
