If you dont mind realistic weight in some parts, you could make the weapons like the guns to mass=0 and the missiles to mass=0.1 (or 0.2) (setting missiles to mass=0 will make it too light for detatchers, always set it to either 0.1 or 0.2)

if you use fuselage wings, you could halve the weight of it to half or even just make the mass set to 0, saying that you have wings inside it

weight distribution is also a thing, having too much weight in either front or back will tend to make the plane not have smooth pitching. I often put the weight in the very middle (or make both front and back lighter) so itll be easier to turn.

Low wing load. Control surfaces size isn’t as important. Having the wing loading below 29lbs sq ft allows for good maneuverability.
