I always put sticks betwen the pilot's legs.... hold on, that sounds bad, lemme rephrase:
I always put the stick in the middle, cause it looks cool. Realistic or not, coolness wins

The F-15EX and the F/A-18 series has fly by wire and they are all center stick crafts
Fly-by-wire jets use side sticks, while jets with manual control use center sticks. It all depends on the type of jet.
