You have a couple of options to make your life easier:
1. increase power
2. increase wing area
3. decrease weight
4. change mass distribution to improve stability
5. increase prop diameter for better power absorbtion and acceleration
6. add flaps
7. decrease drag, although this will have minimal effect at low speed
I think, increase the wingspan, and move the wings forward. If you can XML, slash the wings size scale to allow more surface area in the same space. I usually use .05,0.5,0.5 Not to mention, increase the engine power to like, 1500 hp using XML

Flat-bottom airfoil in the front, more powerful engine. Keep the weight down, angle horizontal stabilizers a degree or two if pitch problems persist.
