1st is there are no elevators. 2nd, the plane uses a Symmetrical airfoil which creates small amount of lift unless the angle of attack is pointing upwards. 3rd, delta wing planes naturally is tail heavy, what you need to do is make it nose heavy. Lastly, a landing gear might help( a ski type landing gear is the simpliest and effective enough).
I don't have enough knowledge about those fancy circuits you made but when it comes to performance designing, i can surely help.
