It's true that the P/W thrust to ratio is higher than usual but remember that real Su-27 had Center of Mass near Center of Lift so it makes the Su-27 unstable but agile, balanced by computer.
Your Sukhoi's CoM is too far from CoL, thus weak controls, it wouldn't be effective on dogfights.

@Khanhlam i think its kind of unrealistic because the power/weight ratio is too high making it have no sense and feel of heavyness when turning and climbing up easily even at low throttle

I suggest you to try my Simple modified Su-27 For AI opponent, it does almost what the real Su-27 can :)
This one is flies fun but not a good fighter.

@Khanhlam Well, for an AI opponent, it doesn't do 30+ G's at full burner. Which is great in VR. At 200-300mph it outmaneuvers some of my planes

Uh i reject to that, this one is fairly not enough nor realistic to fight with, the maneuvers is slower than the real Sukhoi.

This makes a great dogfight opponent. Not aggressively fast or annoyingly slow.
