@Davislpruder It could be that the weight is too close to the center of lift. But if that hampers maneuverability, try tilting the wings as if they are pitching down. I don't think I can explain it well, but if you look at the wings on the Pike fighter I made, they are tilted to counteract the aircraft from pitching up. If it starts pitching down, you can always trim the aircraft.
@Davislpruder Also pay attention to the Col, and the Com. Basically you want the Center of mass in front of the center of lift. Which are the red and blue lines respectively when you turn on the Col, Com, and Cot view. If you toy around with those you can make your aircraft more or less maneuverable depending on where you focus the weight.
@Davislpruder I'm not very good at giving advice. I guess what I'm saying is just focus on basic shapes. Like I said this one is just a cone with an engine in the back and some wings attached to it.
@Davislpruder I guess just try and experiment with the fuselage block. Try to make simple shapes, for example, this aircraft is essentially a cone and the leading edge extensions, the orange part connected to the wings, are 4 fuselage blocks flattened down.

@ThomasRoderick It's Supposed be about 4800 rounds per minute, also it fires a futuristic round. Basically The cartridges contain some kind of plasma gas sort of like Star Wars.
