I'm using guns only because cannons shell sometimes explodes as fast as they are fired (due to some jundroo funny collider mesh brrt) and when I disable their collider they become unable to hit let's say another aircraft's fuselage too. As soon as they fix this (forgive me for this) screw the gun.
Suggestion:
Add a limit to aircraft : speed limit, which could be set in the property of cockpit, when aircraft starts to exceed this given speed limit the system start to disconnect its parts and block the input of pitch, yaw, VTOL, trim and roll slowly and cause the crash of aircraft (for simulating overspeed caused midair disintegration). Old aircraft and users that does not want to set a speed limit for their aircraft could be added for a default speed limit of 0 which stands for no limit.
