pretty cool, I would challenge you to try and use fuselage blocks instead next time, they will run better, look better, and give you more flexability to express your creative energy!
@avataxel the reason might be the new beta that SP is trying out atm, if you don't have cannon parts then your not on the right version of SP, if you do then I'm not sure and you'll have to ask HellFire
The AI for planes assumes that you are trying to level off in flight, and therefore retracts landing gear, straightens vtol etc. For cars you have to use throttle + roll as your control of the AI won't know what to do. The AI is still pretty new and very basic :)
its quite tricky to use, you basically have to go to the dev console by pressing ~ and type "connect (insert server IP here)", the public one is 157.7.205.136, so for example in the dev console you could type Connect 157.7.205.136

Gravity continues to work, however the air becomes thinner as you gain altitude, reducing friction and allowing parts to continue to fly for far longer
upon viewing xml file its quite simple if you can xml mod via overload, just go to beacon in overload and change input to "brake", so this won't technically be a "pitch down" but if you hit brake they should come on, let me mess around a little bit and ill get back to you on that one
yes it is infact, i did it with an old build i did 2 years ago, if you have overload you can find my 1979 pontiac trans am and view what i did or just nag them off of that and save to subassembelies

I'm not big into XML files so this might be totally false but i bet theres some code you could write or edit in XML to link speed to degrees, if I understand correctly that's what your trying to do?

+1this is cool, but most modern builds use fuselage blocks because they reduce part count and are much more flexible with styling, try using those!
