I usually use guns for specific roles, e.g tractor beams or CIWS, and in that department they're better. But in terms of general purpose, I find I prefer cannons- better realism, customization, and aesthetics.
If you arrange VTOL nozzles in a circle, it will create a ring exhaust.
Also, if you set the corresponding engine's max over 1, it will create a spaced exhaust pattern.

What I do is set most of my mass to zero. If you check some of my (recent) planes, most are in the 500-1500 pound range. This helps a lot with maneuverability, as the wings don't have to lift much weight. Looking at your most recent plane, it's about 8K pounds, which is a little too much for the wings to impressively perform
About the high-speed wobbling-that usually happens on wings. Instead of using regular wings, try using structural wings. With them, you can add the control surface and enable wing physics in Overload. They won't wobble. Another solution is a more complex, higher part fuselage—don't really know why but that seems to help.
If my advice is bad (it is) try reverse-engineering this. If that's not supermaneuverable, I don't know what is (LandingGear to deactivate gyro mode btw).

I agree with @AsteroidAsteroidTheBook though, SledDriver's flight modules are crazy good. Perfectly level flight, easy control, the works. Downside to using it is you'd have to disable all drag and mass on the current model.
If you're unwilling to do that or use his modules, I'd advise getting the gyro/engines aligned as perfectly as possible with the CoM. If you hate gyros, try some nudged wings to stabilize, and for control you could use VTOL RCNs.

It's Google's fault, not the devs'. Google required 64-bit systems, and Jundroo had to switch to a system that doesn't support mods. It is in no way their fault, and asking about it constantly will change literally nothing and just annoys everyone.

As for your creations—if you uploaded them on the site, download them. Then press the Undo and then Redo buttons. It'll load up your creations, but without the mod parts.
