Santa's sleigh (work in progress) I am making is 700+ parts as of now. But it runs moderately well on my phone because the performance cost is less than 2k.
@Panzer22 depends on what you prefer. Gyroscope helps to stabilize aircraft and doesn't need much work. But it's too artificial. To stabilize without gyro, you need FT, which is hard.

Use VTOL engines and nozzles. Center of thrust and center of mass must be aligned with each other.

It gets disabled when you fiddle with the prop settings. (Changing the pitch angle to anything other than auto to be exact)
Enable throttle governor.
