Also, nudging with Shift+WASD is not working unless I open the nudging menu, then it works after I close it, but as soon as I reload the editor or return from the game it stops working again

At least when I'm using a joystick, it feels much more responsive.

@avataxel limiting the FPS can increase the stability of the game. And I highly doubt that any mod could improve the optimization of the game without drastic changes to the source files.

@Winstonlharambe try copying the tail wing and placing it inside the existing one. That will move the CoL backwards, make the plane more stable and glideable and also will not alter the looks at all
